Time for the annual clean out, inventory and re-organization of my pantry; what a job! I have seen many dead weevils so I must have over looked a bag of beans or something and they hatched out. I keep trying to make myself to remember to put things that might have weevil eggs into the freezer so they won’t hatch out and destroy my inventory. Sometimes I am good at it and others…well weevils appear. I had quite a few cans of crushed pineapple that were reaching their ‘use by date’ so I decided to bake a Pineapple Upside Down Cake for supper. I forget how good they are and a well stocked pantry should have all the ingredients so I consider it an easy from scratch dessert to make. Here is my recipe to share with you.
Pineapple Upside-Down Cake
2 8-ounce cans crushed pineapple
2 Tablespoons Butter
½ cup packed brown sugar
1 ½ cups self-rising flour
1/3 cup shortening or oil
¾ granulated sugar
1 large egg
1 ½ teaspoons vanilla
Preheat your oven to 350 degrees. Drain the pineapple and save the juice.
Melt the butter in a 10 inch well seasoned cast iron pan; stir in the brown sugar and 1 Tablespoon of the pineapple juice.
Add water to remaining pineapple juice to make 2/3 cup liquid in total. Spread the 2 cans of crushed pineapple over the top of the melted butter & sugar.
Cream the shortening or oil and the granulated sugar about 30 seconds. Add egg and vanilla, beat 1 minute. Alternately add the flour and pineapple juice and beat after each addition.
Spread in the pan over the top of the crushed pineapple. Bake in a 350 degree oven for about 40 minutes.
Cool in the pan for 5 minutes; invert onto a plate or platter. Serve warm. Serves 8.
Our kittens have really grown and are 17 days old now. Their eyes are open and they are beginning to try to walk on all four paws. They are such precious little things. I can’t remember ever having small newborn kittens to enjoy as most of the cats I have cared for have been at least teenagers or young adults by the time I got them. Mother is enjoying playing with them as well, twice a day we have to get them out of their holding pen and play with them. I honestly don’t know what we will do when they start running around the cottage in earnest. Fritz has been a perfect gentleman with them, cautiously stepping forward to sniff at them and wondering why they make such squeaky noises. Olivia continues afraid of the kittens as well as their Mother, her social skills are in need of improvement. I will try to make myself post some photos of the kittens soon.
